shrimp stuffed avocado



Ingredients:

  • 2 large avocados
  • approx 4 cups of fresh or frozen shrimp (one small bag)
  • 2 tbs of mayo
  • dash of salt and pepper
  • 1/2 tsp lemon juice

- cut the avocados in half and remove the seed slice along the avocados leaving it in the shell

- rinse the shrimp, then mix together shrimp, mayo, salt, pepper, and lemon juice

- fill avocado with the shrimp salad and serve
