Chimichurri Burgers with Gouda Cheese





Chimichurri sauce:

    • 2 garlic cloves
    • 1 jalapeno, stemmed, seeded
    • 3/4 cup packed fresh parsley leaves
    • 1/2 cup olive oil
    • 2 TB sherry
    • 1/4 tsp salt
    • 1 1/2 tsp dried oregano
    • 1/2 tsp red pepper flakes

prepare: combine garlic and jalapeno in food processor until finely minced. Add parsley, olive oil, sherry, salt, oregano, red pepper flakes, process until well combined.

Burger

  • 1 1/2 pounds ground beef chuck
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 ounces Gouda cheese, diced
  • 4 hamburger buns

Prepare: Preheat BBQ

spoon 3 TB chimichurri sauce in large bowl. Add meat, salt, and pepper: mix well. Divide into 8 balls. Form each ball into thin patty. Divide cheese over four patties and top with reaming patties, seal edges to enclose cheese.

Grill patties on BBQ add slices of gouda cheese ontop of burgers if desired. Place patties on bun and serve with reaming chimichurri sauce on top.
