Reine De Saba (Chocolate Almond Cake)

serves approximately 6 to 8 people
ingredients:
  • 4 squares sweet baking chocolate melted with 2 tbs of rum
  • 1 stick softened butter
  • 2/3 cups granulated sugar
  • 3 egg yolks
  • 3 egg whites
  • pinch of salt
  • 1 tbs granulated sugar
  • 1/3 cup almonds
  • 1/4 tsp almond extract
  • 1/2 cup flour

butter and flour cake pan, preheat oven 350'

  • set chocolate and rum in a small pan, place small pan in a larger pan with boiling water, to allow chocolate to melt (proceed with the rest of the recipe)
  • cream butter and sugar together
  • beat in egg yolks until well blended
  • in a separate bowl beat egg whites,salt,and 1tbs sugar
  • with a rubber spatula, blend the melted chocolate into butter mixture,stir in almonds,almond extract, stir in 1/4 of egg white mixture
  • slowly stir in rest of egg white mixture while sifting in the flour
  • put batter in cake pan, bake for 25 min until toothpick comes out clean
  • cool for 10 min remove from pan then cool for app. 2 hours in fridge

chocolate-butter icing

  • 2 squares sweet baking chocolate
  • 2 tbs rum
  • 5-6 tbs butter
  • a bowl of ice cubes
  • place chocolate and rum in small pan and place in larger pan full of water to melt
  • remove small pan from heat after about 5 min or when chocolate is melted and smooth
  • place the small pan in the bowl of ice and mix in butter stirring constantly
  • spread over cake with knife or spatula
  • let cool for app 20 min in fridge
