Thai Veggie Spring Rolls

  • A very simple recipe, that is full of flavors, filling enough to be a dinner, or make it a side dish to some yummy Thai food!  
  • Ingredients
  • Egg roll wrappers
  • 4 carrots
  • 4 sticks of celery
  • 1 TB minced garlic
  • 2 tsp chopped jalapenos
  • 1 cup of chopped cabbage
  • 3 tbs fish sauce
  • 2 TB sugar
  • 1/8 tsp white pepper
  • 2 TB olive oil
  1. Shred celery and carrots
  2. Pour oil in pan add vegetables, garlic, seasonings, and fish sauce
  3. Sate for 3 min and remove from pan
  4. Take egg roll wrapper and lay in a diamond shape
  5. Scoop approx. two spoonfuls of vegetable mixture onto wrapper
  6. Fold in right and left corners then the bottom (like an envelope)
  7. Roll into top fold and seal wrapper by wetting the edge with water
  8. aAter completing all the rolls place in a skillet with olive oil that coats the bottom and fry until all of the outside it crispy and golden brown
  9. Serve with sweet chili sauce, hoisin sauce, or sauce of choice
